After watching a marathon of Chopped on the Food Network and craving the best fish tacos I’ve ever had (in San Diego at a hole-in-the wall Mexican drive thru – so friggin’ good!), I got a little inspired.
I felt like making a pretty plate of fish tacos like the pros do, so I set out to create my own version of mahi tacos. In case you’re feeling a little fishy yourself, I’ve included my recipe below. Of course I suggest tweaking to your liking, because just like style, we all like something a little different.
What you’ll need:
- Mahi mahi
- Cheese (Mexican blend)
- Black Beans
- Sour Cream (I used yogurt/Greek yogurt)
- Chili powder
- Onions (I used onion powder because I hate actual onions)
First up, you want to season your fish with chili powder, lime juice, onion powder, and whatever else you please. Throw your mahi on the grill util cooked to perfection. I decided to pull out the old George Forman grill.
As a sauce, I created a concoction with fat free plain yogurt (a substitute for cream cheese), chili powder, lime juice and cilantro.
After your sauce and fish are done being made, load up your tortilla with corn, beans, fish, cheese and the sauce. And if you’re a little parched, add a brew to your feast. Say goodbye to summer with some tasty Oberon.
