Chicken Casserole Recipe

When I think of casserole dishes, I think of a 1950s housewife whipping up a dinner for her family in her white picket fenced home. But it’s 2020 now and life is far from what it was in the 50s. These days, casserole recipes are diet friendly and can last for a few days to minimize the amount of days needed to cook in a week. Basically, perfect for a family on the go.

Here’s a Keto chicken casserole recipe I found onPinterestand modified to my liking. It’s been a big hit at home and have already made two batches. I’ve also received compliments at work of how great it smells after heating up a bowl for lunch. I will be putting this into my meal rotation for me and Jamarr!

Chicken Casserole Ingredients:

– Chicken breast (2-3 depending on how much you want to make)
– Broccoli
– 1 Cream Cheese packet (low fat)
– Shredded Parmesan Cheese (low moisture)
– Shredded Mild Cheddar Cheese
– Heavy whipping cream
– Seasoning – salt, pepper, Italian seasoning, garlic powder, Mrs. Dash Table Blend or whatever your heart and tummy desires

How to Make Chicken Casserole: 

Season and bake 2-3 chicken breast for about 25 minutes or until cooked. Remove from oven and cut chicken breast into smaller pieces.

Put cut chicken into casserole dish and add broccoli, a half a pack of the cream cheese, heavy whipping cream, the shredded cheeses and seasonings. Mix together and put in oven at 375° until golden brown, or to your liking.

Cool and eat! This is also a keto friendly recipe for anyone watching carb their intake. Cheesy, delicious and super easy to make. Let me know if you try!
