I grew up not believing in Santa. It was kind of an unspoken fact in my household that he isn’t real. I even ruined Christmas for a girl name Jennifer Kudson in 4th grade by breaking the news to her that there’s no such thing as Santa Clause. Jennifer, if you’re reading this, I’m sorry!
Whether you believe in the big jolly guy or not, you have to admit Christmas is the perfect time to experiment with cookies. Cookies are allegedly Santa’s favorite, so I decided to whip up a treat for the make believe fella (but really for myself because I totally have a sweet tooth). You may have seen in a previous post, I made Unicorn Breakfast aka Funfetti dip; so without making a trip to the store, I used what I had at home and finished up the box of Funfetti mix to make Funfetti Cookies!
These cookies are like a fluffy party in your mouth. So yummy and so easy to bake.
What you’ll need:
- Funfetti Cake Mix
- Vegetable Oil
I didn’t want a full batch of cookies so I cut the recipe in half, but here are the instructions to bake 2 dozen cookies:
Mix 1 box of Funfetti cake mix with 2 large eggs, 1/3 cup vegetable oil, and 1tsp of vanilla extract. Form cookie-like circles on cookie sheet and cook until light golden. I baked my cookies at 375 for about 18 mins. The vegetable oil gives the cookies a cake-like consistency so they are perfectly moist and fluffy.
