Snow is on the ground, temperatures are dropping, and it’s officially winter – time for some homemade soup to keep you warm. I decided to whip up this fab recipe after having a craving for cauliflower. Super random thing to crave, I know. But it has fabulous benefits like low calorie and a good source of fiber. Plus, there’s so much you can do with cauliflower like bake it, mash it, and soup it!
What you’ll need to make a yummy cold-weather cauliflower soup:
Cauliflower
Flour
Milk
Chicken Broth
Celery
Carrots
Parsley
Bacon
Seasoning of choice – Mrs. Dash Table Blend
To start, boil down your cauliflower, carrots and celery. Once they have softened slightly, drain and set aside to add with other ingredients later.
Begin to boil chicken broth and milk, then add in flour and stir. Continue to let boil and add in your spices/seasoning, bacon (cooked or bacon bits if you’re not in to actually cooking bacon like me), and then your cooked veggies. Let sit an boil for about 10-15 mins, cool to your liking and serve! Top with cheddar cheese and you’ll be a happy little warm, cauliflower-loving camper.
